Red Wine Jus

INTRODUCTION
This is such a lovely Red Wine Jus. This is a combination of different recipes I have tried and this is the one that I found the best. I’ve made a few red wine jus recipes and thought I had the best one, but upon trying this recipe I found mine wasn’t. I love the balance that this recipe gives and I think it’s the port that gives it that little bit of a sweet taste that makes the difference. You should try this one. Extremely easy recipe which tastes great.

Ingredients
Oil
2 shallots, chopped roughly
175 mL port
175 mL red wine
1 sprig fresh rosemary
1 bay leaf
750 mL homemade beef stock
Salt, to taste
2 rounded teaspoons butter
Method
Put enough oil in a pan to just coat the shallots, then caramelise them.
Add port, red wine and herbs, bring to boil. Simmer and reduce by half.
Add stock and reduce by half again, to a consistency that will coat a spoon.
Taste regularly and add a pinch of salt, if needed.
Remove pan from heat and strain jus through a fine sieve.
Return to stove and bring to a boil. Remove from heat and melt in butter.
